This post is SUPER long but I promise it’s worth a read for anyone struggling like I am with weight loss and other things! I am very mature for my age. These are my two eggs poached in a 1/2 cup of Trader Joe’s puttanesca sauce….much easier and tastier than poaching eggs in water. The dots in the eyes are capers I picked out from the sauce….I kind of think he looks like Kermit the Frog. I hate the Muppets but I love this.
You can do this with any tomato sauce! I think tomato sauce is gross, especially on pasta so I will be doing this until I’ve used it all up. And also this keeps my whole apartment and my frying pan from getting that funky egg smell. I don’t like eggs but I’m trying to like them because I know I need to scale back my carb intake quite a bit. My body composition is not the same as it was when I was younger. Somehow I’ve gone from being a slow oxidizer to a fast oxidizer. When I was a slow oxidizer, I was able to stay thin with very high carb diet with low to moderate amounts of fat and protein in my vegan days….my vegan days also left me intolerant to gluten and soy. Back then, I only craved carbs. I was slender, petite, and active (I didn’t really work out very much, but I walked probably three miles a day on campus) and I weighed anywhere between 105 to 115 lbs effortlessly. My body was perfect then; I’d get so many compliments on my hair, skin, and figure almost daily. *sigh* I will not pine for my glory days….even though I already have.
